How to Make Ice Cream Cookie Sandwiches
If you follow along with me regularly, you know I’m not much of a chef, but I do love to put together grazing boards and bake easy desserts because I’ve gotta have my daily sugar fix. Most recently we celebrated National Ice Cream Day with homemade ice cream cookie sandwiches. I’m sure you’re like how do you have the time to observe all of these random food holidays?! And I’m like how do you not?! LOL Because when it comes to snacks and treats, I always find the time! In reality though, the only reason I’m able to make time is because my Walmart+ membership makes it so easy! With free same-day delivery from local stores, Walmart+ is the go-to membership to save time and money and make life easier. Walmart literally gets me whatever I need whenever I need it.

How to Make Ice Cream Cookie Sandwiches
Ingredients:
Large Cookies — We like chocolate-chip and M&M cookies, but you can use whatever kind you’d like. You could even bake your own cookies, but we got some from the bakery to save time.
Toppings: The sky’s the limit when it comes to toppings. In fact, I could think of a bunch of other toppings that would be delicious over ice cream, but we went with chocolate chips, Reeses Pieces, Oreos & Rainbow sprinkles.
Pint Size Ice Cream — Choose your favorite or go simple with vanilla and let the toppings be the flavor. We got the 3 flavors: vanilla, mint chocolate chip and strawberry.
Steps:

- Crush all of your toppings in plastic baggies and then pour them into their own separate bowls.
- Use a sharp knife to cut your ice cream pint containers into 3-4 slices to create the perfect size ice cream filling for your cookie sandwich. The trick is to make the ice cream slice larger than the cookie so that it’s easier to roll into your toppings and ensure that everything sticks!
- Place your ice cream slice between two cookies and dip it into your topping of choice
- Be sure to place in the freezer immediately after making them unless you’re ready to serve! We laid ours out on tin foil in the freezer until we were ready to eat them!

This dress is perfect for brunch, family photos, bridal showers and summer parties. The fabric is super lightweight and breathable so you don’t have to worry about the sleeves being too hot. I plan to wear it to Beck’s baptism coming up. The Jennifer Long Sleeve Smocked Dress is also great for baby showers, expecting moms and postpartum moms because it’s super giving and there is plenty of room through the stomach area.

MY SIZING AND HEIGHT FOR REFERENCE:
Most people don’t realize how petite I am so and I understand that knowing my sizes can help you determine what size to get.
I am 5 ft and I wear a size 27 in high waisted jeans & smalls in leggings. I’m currently a 34B and take size XS/S in dresses and tops, smalls in sports bras, and XS-S in outerwear. I typically size down in Gibsonlook pieces. I’m wearing a size XXS in the Jennifer Long Sleeve Smocked Dress.
SIZING:
Be sure to size down because Gibsonlook runs large. I am wearing the size XXS and it’s still comfortable and spacious enough to move around in. I designed the Jennifer Long Sleeve Smocked Dress with a midi length but if you’re petite like me (aka 5 ft) the dress will hit you right at the ankle, which still looks great with both flat sandals and heels. It’s also fully lined through the skirt of the dress so you don’t have to worry about it being see through. However, you do need to wear a nude bra with the ivory dress because the bust isn’t lined and it’s very sheer.

What to Buy from the Nordstrom Anniversary Sale 2021
Morning everyone, the Nordstrom Anniversary Sale opens up to Ambassador status tomorrow on Wednesday, July 14 so I’m sharing my wish lists and what to buy from the Nordstrom Anniversary Sale 2021. You can also always click on “shop” page on my navigation bar to shop my updated top picks. I will continually update throughout the sale. Wednesday, July 28th the sale will be open to all everyone so I highly suggest that you sign up to become a member (here) to shop before everything sells out. This sale is known for offering some of Nordstrom’s top pieces like the BlankNYC suede moto jacket, the Barefoot Dreams cardigan and the coziest blanket year after year! I love shopping the Anniversary Sale because Nordstrom isn’t just marking down items that didn’t sell over the summer, they’re selling brand new closet staples and on-trend items at unbeatable prices for only a limited amount of time before the prices go back up. It’s the ultimate time to go crazy on pre-fall denim, booties, jackets, Zella leggings, handbags, shoes, you name it! Affordable Fashion Finds for Summer
Hey everyone, when it comes to styling outfits, you all know that I like to feature a mix of high-low priced items here on Haute Off The Rack so today I’m partnering with Walmart to show you some super cute affordable fashion finds for summer. I’ve been shopping at Walmart since I was a kid. I remember my mom taking me and my sister to the store when were little and we would always beg for Oreos and Doritos, but she rarely ever gave in. Then I would find 536,798 more things I wanted on the shoe and handbag aisle. I remember one time vividly that she actually said yes and she bought me and cousin matching black purses a small red dragon design on the corner. I can’t say I’d wear that bag today, but I still love that memory of shopping with my mom in Walmart.
Okay…one more story because I’m feeling nostalgic. When I was in middle school Birkenstock’s were super popular and I wanted a pair sooo bad, but my mom was and still is very frugal so she wouldn’t buy them for me. Well, one day we were shopping in Walmart and I spotted a pair of brown clogs that looked just like the pair I wanted and this was fortunately another one of those times that she actually said yes. I remember wearing them to the movies with a pair of jeans and a rugby polo. Good times!
Anyway, I love how these little memories of shopping with my mom pop into my head as I head into the ladies department or turn onto the snack aisle in Walmart. Haha! Speaking of the women’s department, I picked up some really cute activewear pieces from Walmart the other day (see below). I also found a ton of affordable clothing, shoes and accessories for summer that I rounded up below and they’re all available online.
