On Day 4, we said our goodbyes to Juley and the lovely Saint Hotel and checked into the Omni Hotel on Royal St. for some more fun deeper into the Quarter!

Learning how to poach an egg, make homemade pralines and cook New Orleans Style Grits and Grillades at the New Orleans School of Cooking definitely sits at the top of my favorites list from our FQ Stylecation. Y’all, I can’t believe that I actually made this dish with my own two hands! Okay okay, my two hands along with the help of Krsytal and Chef Austin Faucheaux! However, it wasn’t until I tasted our meal that I had to really pat myself on the back! It was hands down, the most delicious grits and grillades I have ever eaten and I’m not just saying that I because I made it! I was so proud I that snapped a photo with my iPhone (pictured below) and messaged it to everyone I know! If you’re looking for a fun new learning experience with your family, friends or even just yourself, I highly recommend that you book a class at the New Orleans School of Cooking. You even get to enjoy a little wine and some New Orleans history while you cook!
Guess What? I have a surprise for you! I’m going to give you the recipe for this appetizing dish so you can it yourself at home! I definitely suggest taking a class first though! Good Luck and I want see how your dish comes out so make sure to tag me in your photos! @HauteOffTheRack and use #HauteOffTheStove!
Stone Ground Cheese Grits:
Ingredients: (makes 4-6 Servings**)
- 5 C. water
- 1 C. stone ground white corn grits
- 1/4 C. grated cheddar cheese
- 1 tsp. salt
- 2 Tbsp. butter
- 2 Tsbp. Romano Cheese
Procedure: In a tall sauce pot, combine water and salt. Bring to a boil. Slowly whisk in grits and reduce heat to low and cover. Cook for 15-20 minutes stirring occasionally to ensure grits from sticking. Remove grits from heat. Add butter and both types of cheese and mix well. Serve warm.
Grillades: (makes 4-6 servings**)
Ingredients:
- 1 1/2 lbs. round steak
- 1 Tbsp. Joes’ Stuff seasoning blend
- 1/2 C. flour + 2 Tbsp.
- 2 Tbsp. vegetable oil
- 1/2 C. chopped white onion
- 1/4 C. chopped celery
- 1/4 C. chopped green bell pepper
- 1 Tbsp. sliced garlic
- 2 C. beef stock
- 1/2 tsp. dried thyme
- 1 Tbsp. Worcestershire sauce
- 1 Bay leaf
- 1 C. chopped tomatoes
- 1 tsp. red wine vinaigrette
- 2 Tbsp. sliced green onion
- Hot sauce to taste (optional)
- Additional Joe’s Stuff to taste
Procedure: Pound out round steak with meat mallet to about 1/4 inch thick then julienne the beef into 1/2 inch thick strips. Combine flour with Joe’s Stuff and dust the pieces of meat in the flour shaking off any excess flour.
In a tall skillet, heat the oil and brown the pieces of meat on each side. Lower hear and immediately add onion, bell pepper and celery and cook until translucent. Stirring constantly, add the renaming 2 Tbsp. of flour and cook on medium heat until flour starts to brown. Add garlic, bay leaf, thyme, worcestershire sauce, tomatoes and beef stock. Bring to a boil. Reduce to a simmer and cook 30-45 minutes or until beef is tender.
Once ready to serve, add hot sauce, red wine vinaigrette and Joe’s Stuff seasoning to desire taste.
Serve over warm grits and garnish with poached egg and green onions.
Poached Eggs:
Ingredients:
- 2 qts. water
- 1 Tbsp. white vinegar
- 4 large eggs
Procedure: In a tall sauce pot, bring water and vinegar to a medium simmer. Crack egg gently into a large spoon or ladle and carefully lower into a simmering liquid.
You may poach 2 eggs at a time without over crowding the pot.
Tips: Use very fresh eggs. Use eggs at room temperature.
After brunch, we couldn’t leave without dessert so we made homemade pralines! The process might look easy, but the art of making pralines is no easy task. The mix has to be just the right temperature and you must place the warm candies quickly and carefully onto the wax paper before they harden. Be sure to watch our behind the scenes video!

New Orleans French Quarter Stylecation: Day 2

On Day 2, we partied Mardi Gras style with king cake and beads in our huge white bath robes at The Saint Hotel! I can’t help but cozy up in the hotel bath robes and order room service whenever I’m vacationing away from home! It’s the best part! Trust me, I didn’t grow up that way though! I can only remember one time ever that my mom let us order room service. She took me on a business trip with her to Vegas when I was 6 years old and we ordered pesto pasta to the room for dinner. I still remember that moment like it was yesterday. There is just something so special and luxurious about room service! Probably because I was deprived from it as a child! Haha! I wasn’t even allowed to look at the $10 hotel room water bottles and candy!
Anyway, how beautiful are these modern yet simple blue and white rooms? I told you that you’d love them! How about those exposed brick walls and white leather headboards! To die for, right?

After King Cake for breakfast, we headed to Rib Room at the Royal Omni Orleans hotel for lunch. If you haven’t caught on yet, I’m sort of a foodie! I pretty much base my entire day around all of my meals. Is that awful? Haha!
The Rib Room delighted us with delicious Bloody Mary cocktails and an array of scrumptious appetizers before we ordered our main courses. My favorite appetizer was the New Orleans Style BBQ Shrimp served over stone ground grit cake and charred green tomato chutney! Let me tell you, best BBQ shrimp and grits that I have ever tasted. The grtits practically melted in my mouth. I can still taste them now! Is that weird to say?
For my meal, I ordered the Royal Club: rotisserie turkey or shaved roast beef, provolone, bacon, lettuce, and hot house tomato with sea salt fries. Sometimes after eating fancy apps, you just gotta have some fries!
I’m not gonna lie, we could barely even touch our coffee and Raspberry Cheesecake after we stuffed ourselves with New Orleans Gumbo, BBQ Shrimp, Whiskey Soaked Lamb Ribs and House Smoked Salmon. On top of that, we of course all tasted each other’s main dishes!

Hi everyone! I apologize for the late post today, but I had the worst sinus headache all day. Anyway, I’m all better now and I’m so excited to share day 1 of our New Orleans French Quarter “Stylecation” with you! I teamed up with Krystal of A Pinch of Lovely and Juley of Upperlyne & Co to give you five whole days of New Orleans fashion, food and fun just in time for Mardi Gras! We’ll tell you all of the best places to drink, dine and wine (oh and sleep) in New Orleans.

(not pictured– the ridiculous amount of luggage that we really packed for the week!) Thank goodness that the bell hops were top notch and helped me lug two whole carts full of my stuff up to our room! I give the Saint Hotel not 5, but 6 stars for their impeccable customer service! Check out my twitter (@hauteofftherack) if you want to see what my luggage really looked like!
On Day 1 of our French Quarter Stylecation, we checked into one of New Orleans’ newest hotels, the Saint Hotel located on Canal Street just around the corner from the Quarter. I love the hotel’s modern style with a mix of heaven-meets-hell. The lobby is simply stunning with it’s long dining room table surrounded by lucite chairs and the beautiful chandeliers that hang inside of large gold bells. My favorite part about the rooms other than the perfect city view and comfy beds is the exposed brick walls and long white curtains.
See more on the Saint Hotel tomorrow!
If there is one place that you must absolutely visit in the French Quarter, it is none other than Cafe Beignet. Cafe Beignet on Royal St. is the most darling little spot to enjoy mouth-watering beignets and café au lait! The cafe is open to the street, so it’s perfect for people watching in the Quarter. The characters in the Quarter are pretty interesting even on a normal Wednesday morning! So keep your eyes open!
Cafe Du Monde is another great place to stop for beignets too, but I love the sweet and quaint atmosphere of Cafe Beignet especially when I want to avoid the hustle and bustle of tourists in Jackson Square! It’s a local hidden gem!
